What's-in-the-Crock-Pot-Monday

We are having What's-in-the-Crock-Pot-Monday this week since tomorrow is my b-day and I definitely WON'T be cooking on Tuesday. I've never been a huge fan of meatloaf...but this one is AWESOME! It calls for crushed taco shells instead of bread crumbs. Tested and approved.

Rio Grande Meat Loaf

Cooking spray
1 can black beans, rinsed and drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/3 cup fresh cilantro
2 tablespoons minsed seeded jalapeno pepper
1 teaspoon salt
2 teaspoons ground cumin
2 teaspoons chili powder
1/2 teaspoon pepper
4 taco shells (I used white corn chips)
3 large garlic cloves, minced
2 lbs ground round (we used turkey...as usual)
1/2 cup salsa

  • Spray crotch pot with cooking spray. Tear two sheets of aluminum foil long enough to fit bottom of cooker and to extend a few inches over each side. Fold lengthwise to form a 2 inch wide strip. Arrange foil strips in a cross fashion in cooker, pressing strips to bottom of cooker and extending over sides (helps you get the loaf out when it is finished).
  • Combine beans and next 11 ingredients in a large bowl. Stir. Crumble beef over veggie mixture and stir until blended. Shape into loaf.
  • Cover with lid and cook on high for 1 hour. Reduce to low and cook 2-3 more hours until done.
  • Spoon salsa over each piece before serving.
